Strawberry Cream Cheese Crepes

You don't have to wait for strawberry season to enjoy this sweet treat. Just pick up some fresh strawberries at your local grocery store for this magnificent treat.

This strawberry sweet treat recipe belongs to my daughter-in-law Tricia.  She makes this tasty sweet treat with simple ingredients. The best part is that she takes the time to make her own crepes.  

This is a perfect dessert surprise for Valentine's Day, Mother's Day, Father's Day, and Birthday. Or, impress your guests at your next Dinner or Luncheon date. They'll think you're a pastry chef for sure.

Ingredients:

Crepes:
1 cup of milk
4 eggs
1 tsp vanilla

Filling:

8 oz. package of cream cheese
1/2 cup of sugar
1 tsp vanilla 
Strawberries cut in half

Instructions:
  • Combine flour, milk, eggs, and vanilla in a bowl and mix until you have a batter
  • Spray an 8" non-stick pan with cooking spray and preheat over medium heat
  • Pour enough batter to coat the bottom of the pan
  • Cook the crepes for a couple of minutes on each side, stack and let cool
  • In a bowl combine cream cheese, sugar, and vanilla, and mix until soft
  • Fill each crepe with 2 tbs. of cream cheese, add a few strawberries, and roll
  • Serve 2 crepes per plate and drizzle with the caramel syrup
  • You can add whipped cream or more of the cream cheese mixture to the top if you like
