Easy Cast Iron Skillet Pizza

We love cooking new things in our cast iron skillets and pizza is no exception. This easy cast iron skillet pizza turned out to be amazing and it disappeared in minutes. 

We spend several evenings baking cookies for the Holidays with our daughter and grandsons. On one of these evenings, we needed something quick to eat before we started baking our cookies.

Our grandson Bobby, showed up with pizza dough, sauce, and his favorite topping, olives. Bobby decided to use one of our cast iron skillets to make our pizza.

How to make Easy Cast Iron Skillet Pizza:

  1. The first thing Bobby did was preheat the oven to 500 degrees.
  2. Spread the dough on a floured surface to the size of the skillet, we used our 12-inch cast-iron skillet.
  3. Place the cast-iron skillet in the 500-degree oven for 5 or 10 minutes.
  4. Carefully remove the skillet from the oven using heavy potholders.
  5. Place the shaped dough in the skillet and add your sauce, favorite toppings, and shredded mozzarella.
  6. Place it back in the oven and bake for 10 minutes until the crust is golden brown.
  7. Again carefully remove the skillet from the oven and using a spatula transfer the pizza to a cooling rack.
  8. After a couple of minutes slide it onto a pizza pan slice it and enjoy.
What makes this so easy is you can pick up fresh pizza dough at your local grocery store and have fresh hot pizza in 20 minutes.

Arugula Pizza with Balsamic Glaze

 Now that the weather is a little cooler it's time to turn on the oven for some homemade pizza. This Arugula Pizza with Balsamic Glaze was the highlight of the day.

Pizza is just so versatile, you can top it with whatever you like. I started the morning by making two batches of pizza dough. I used Fleischmann's RapidRise Instant Yeast, with the rapid rise yeast your dough will be ready in about 30 minutes.

Ingredients for the Pizza Dough:

2 packages of RapidRise Yeast
6 to 7 cups all-purpose flour
2-1/2 cups lukewarm water
1/8 teaspoon salt
3 tablespoons of light olive oil

To mix the dough I used my KitchenAid Stand Mixer with the dough hook. Add the water, yeast, salt, and oil into the mixing bowl. Begin adding the flour one cup at a time. Continue mixing until the dough forms. Then, Roll out on a floured surface, cover with a kitchen towel for about 30 minutes. This recipe will easily make three pizzas.

Arugula Pizza


Lightly grease the pizza pan and roll out the dough. I made several tomato pizzas and Jamie made this Arugula Pizza with fresh tomatoes and balsamic glaze.

Start with spreading olive oil over the top of the rolled out dough. Add fresh oregano leaves, Italian seasoning, one clove of minced garlic, and some shredded mozzarella cheese. The fresh oregano is from Jamie's herb garden.

Now, add fresh sliced tomatoes and fresh arugula. You can slice the tomatoes to your liking thick or thin. Add some more shredded mozzarella cheese over top and bake at 450 degrees for 10 to 12 minutes until the crust is golden brown.

Remove the pizza from the oven and drizzle the top with Cento Italian Glaze. This is a sweet and tart glaze made from balsamic vinegar and works well with meat, roasted vegetables, cheese plates, and fruits. Now, it's time to slice and enjoy your pizza.

Alfredo Cheese Pizza Recipe

Alfredo Cheese Pizza Recipe

Our grandson Bobby came over with this delicious alfredo cheese pizza recipe. Bobby loves to cook and is turning into quite the chef.

But first, let me tell you about another use for a cast-iron skillet. We needed a pizza stone for this recipe and didn't have one.

So, Bobby found out that you can use a cast-iron skillet in place of a pizza stone. Just place the cast iron skillet in the oven upside down at 500 degrees for 20 minutes.

After the pizza dough was made, it was divided into four equal pieces. If you need a pizza dough recipe try my All-Purpose Dough Recipe here. Or you can pick up the fresh dough at your local grocery store.

Alfredo Pizza Recipe

Take one part of your dough and spread it out on a floured 10-inch plate.  Use a spatula to spread half of the alfredo sauce on top, then add shredded mozzarella cheese.

Using oven mitts to take the skillet out of the oven and place it on a wooden cutting board. Carefully transfer the pizza from the plate to the bottom of the cast-skillet.

 Place it back in the oven for only five minutes, then slide the pizza onto a rack to cool slightly before cutting.

Cast Iron Pizza Stone


Bobby made four pizzas, two with alfredo sauce, and two tomato sauce, cheese, and pepperoni. The outcome was amazing, these pizzas were delicious with a nice crunch.

Oh, I almost forgot, here is the recipe for the alfredo sauce.

Ingredients

6 or 7 cloves of garlic (diced)
3 tablespoons Olive Oil
1/4 cup grated Romano Cheese 
Heavy Cream (enough to cover the bottom of the pan)

Directions
  1. In a 10-inch skillet, add olive oil and garlic.
  2. Cook over medium heat until the garlic begins to sweat.
  3. Add the heavy cream, enough to cover the bottom of the pan.
  4.  Add the Romano cheese and stir.
  5. Continue stirring until the sauce is smooth.

Bacon Egg Cheese Breakfast Pizza Recipe

Who likes pizza for breakfast? Well, how about trying this bacon egg cheese breakfast pizza recipe. I love making all kinds of different pizzas. I've never made my own breakfast pizza before, until now.

Like all pizza, this one is so versatile. You choose and add your own favorite toppings. I choose bacon, egg, and cheese with some fresh green bell peppers.

Quick Pizza Dough Recipe

First I made some quick pizza dough. I greased my 11-inch x 17-inch pizza pan and spread the dough using my handy Norpro Pizza and Pastry Dough Roller.

Scrambled Eggs for Breakfast Pizza

I set the pizza pan aside and then got to work on the preparing the eggs. I whisked together 9 large eggs with 1/2 cup of milk. I added the eggs to my 12-inch skillet and partially scrambled them over medium heat. I also added one slice of sharp cheddar cheese to the eggs while they were cooking for some added flavor. I didn't scramble the eggs completely because they were going into the oven later.

Easy Breakfast Pizza Recipe

 I spread the partially cooked eggs onto the dough and spread them as evenly as I could. If your using a smaller pan I think 6 eggs would be enough.

Bacon Egg and Cheese Breakfast Pizza

Next, I added the bacon bits, fresh green bell pepper, and shredded cheddar cheese. Now this delicious breakfast was ready for the oven.

Bacon Egg Cheese Breakfast Pizza Recipe:

For the Dough:

4 cups all-purpose flour
1 package instant Rapid Rise Yeast
1-1/4 cup warm water
2 tablespoons oil
1 teaspoon salt (optional)

Directions:
  1. In a large bowl add the flour, yeast, and salt.
  2. Then add the water and oil,  mix until dough forms. I use my KitchenAid Stand Mixer for this.
  3. If the dough is too sticky add a little more flour. If the dough is too dry add a little more water.
  4. Set the dough aside for about 20 minutes. That's all you need because of the Rapid Rise yeast.
For the Topping:

9 large eggs
1/2 cup milk
1 slice sharp cheddar cheese (Broken into pieces)
1/2 green bell pepper Chopped
1-1/2 cup shredded cheddar cheese
6 oz. package Hormel Bacon Bits
Salt and Pepper to taste

Directions:
  1. Beat the eggs together with the milk and partially scramble over medium heat.
  2. Spread the eggs over the dough evenly.
  3. Add the remaining toppings onto the eggs.
  4. Bake at 450 degrees on center rack for 15 minutes.

Fresh Tomato Spinach Pizza

Fresh spinach pizza recipe
I'm always in the mood for pizza, especially if I'm making my own. There is just something special about making pizza with fresh ingredients. This is an easy fresh spinach pizza recipe.

Get my fresh dough recipe from my older post here: How to Make Homemade Pizza. This recipe yields me about three smaller pizzas or two large ones.

So I whipped up the batch of dough in my KitchenAid stand mixer and was waiting for it to rise. Fran knew we had some fresh tomato, baby spinach, fresh mozzarella, and feta cheese in the refrigerator. We always like to experiment with fresh ingredients, and pizza is so versatile that way you can use just about anything you want.

Here is what we used and how we made this fresh spinach pizza. The amount will depend on your taste. We really didn't measure anything we just added these fresh ingredients as we went along.

Easy Homemade Pizza Recipe:


  • Roll out the dough in your pizza pan and brush it will olive oil
  • Next, add fresh sliced tomatoes, enough to cover the  dough
  • Layer on some fresh feta cheese
  • Now add some fresh baby spinach all over the top
  • Add some sliced mozzarella
  • Sprinkle fresh basil and some Italian seasoning
  • Season to your taste with garlic, salt, and pepper.

I preheated the oven to 450 degrees and baked this on the middle rack for 16 minutes. Then moved the pizza to the bottom rack for another 3 minutes just to make sure the bottom was golden brown.

Summer time is finally here in Western New York and that means a lot of family fun with our weekly backyard camp fires. 

Roasting marshmallows, making S’mores, and of course, my favorite mountain pies. In this post, I’m going to show you how to make mountain pies, just in case you've never heard of one. Some people call the campfire hobo pies.

The first thing you need is a nice roaring camp fire, we use our portable camping fire pit in our back yard. Next, you’ll need mountain pie irons, and then some goodies to fill them up and enjoy these tasty little treats.

For Father’s Day this year my daughter got me a set of Rome cast iron mountain pie irons. After following the directions to season them, they made the most wonderful and delicious mountain pies.

There are so many mountain pie recipes: This is one of my favorites
·         Butter a slice of white bread and place it butter side down on one-half of the pie iron.

·         Add about a tablespoon of pizza sauce, you can whip up your own or buy it already in a jar.

·         Now add some pepperoni and mozzarella cheese. Add some mushrooms if you like.

·         Butter a second slice of bread and place it on top of your fillings with the butter side up.

·         Close the pie iron and place it in the fire, turning it occasionally, for about 4 to 5 minutes. 

Cooking in the fire



You can pull it out of the fire to check it during the process to make sure it’s not burning. The hotter the mountain pie iron gets the quicker they cook.

The best thing about mountain pies is that you can use any filling your heart desires. For example, my second pie was apple and cheddar cheese, you can make any hot sandwich you like using these pie irons.

The pie irons come with some nice recipes to get you started, from sweet treats to savory pies and sandwiches.

Just a word of caution: Your mountain pie irons will be extremely hot so be careful for yourself and the kids.
