Homemade meat marinade recipe

Sometimes we just want a juicier and more flavorful cut of meat.

This is the time when you want to use a marinade. When I'm grilling lamb on the rod I like to use a simple Italian salad dressing as a marinade.

But, for steaks, roasts, chicken, and pork I whip up this easy homemade meat marinade.



This homemade meat marinade recipe has a balance of acids, oils, and spices. The acids help tenderize and make the meat juicy while the oils and spices add flavor. I don't always use a marinade but when I do I like this recipe.

Here is the homemade meat marinade recipe:

1/4 cup olive oil
1/4 cup red wine vinegar
2 tablespoons lemon juice
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
2 cloves garlic minced
1 small onion minced
1 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons Montreal Steak Seasoning or Italian Seasoning 

Mix all the ingredients in a large bowl place your cut of meat in a one-gallon zip lock bag or a baking dish cover and refrigerate overnight or at least 2 to 3 hours.

This should be enough for a large roast or 3 to 4 steaks. You can always cut the recipe down for smaller cuts of meat.

Crock Pot Country Ribs

My wife picked up a package of country ribs the other day, and I had all intentions of cooking these on the grill.

When I got home from work the house was filled with the smell of those country ribs cooking all day in the Slow Cooker. She decided to make them a Crock pot meal, and I’m so glad she did.

No real recipe here just put your ribs in the slow cooker add a couple of bottles of your favorite barbecue sauce and set it to the low setting. These cooked for about four hours on the low setting and they were fall off the bone delicious.

Served with sautéed vegetables and rice this made a nice meal for the both of us. The vegetables were simple, cut green and yellow peppers into slices, slice up an onion, and then add some spinach.

Drizzle olive oil into a 10” pan then add the cut up vegetables and sauté over medium heat until the veggies are tender. This turned out to be a great side dish to go along with these country ribs.

Grilled Southwestern Chicken Breasts

Grilled Southwestern Chicken Breasts


I’ll be honest, I’m not a huge fan of chicken, but my wife picked up theses four nice boneless chicken breasts and it is grilling season. It is really not difficult the grill moist chicken breasts.

So we made this Southwestern rub and then I grilled them to perfection. While I went out and turned on the grill to the high setting, my wife coated the chicken breasts with the southwestern rub.

Here is how to grill moist chicken breasts:

I cooked them on high for five minutes per side and turned the grill down to the low setting. I cooked them for about another 25 minutes until the internal temperature was 180 degrees. Then I let them rest for about 5 minutes.

Now here is the Rub:

1 Tbsp. chili powder
2 tsp. ground cumin
1 tsp. coriander
½ tsp. onion powder
½ tsp. garlic powder
½ tsp. dried oregano
1 tsp. sea salt

In a bowl mix all of the seasonings, and then coat the chicken breasts. I do have to say this chicken was really tasty and juicy even for a non-chicken fan like myself.

Broiled Flank Steak

We picked up a 1-1/2 lb. flank steak last week, and I had all intentions of grilling this to perfection. The weather in Western NY just didn’t cooperate that day, so we did the next best thing was to broil it.

Flank steak is a long flat cut from the belly or butt of the cow, and is used in many dishes such as London broil, Asian Stir fry and also famous as the steak for Fajitas.

We decided to make a dry hand rub, after mixing the ingredients we rubbed both sides of the flank stake, set the oven on broil. The steak was 1-1/2 lbs. so we broiled it for about 10 to 12 minutes per side. Cutting the steak against the grain we had nice juicy slices and served with rice and kale this made a delicious meal.

Here are the seasonings we used for the rub:

4 tsp. onion powder
2 tsp. garlic powder
2 tsp. mustard powder
¼ tsp. dried thyme
¼ tsp. ground black pepper
1 tsp sea salt

Grilled Pork Tenderloin

We picked up a peppercorn seasoned pork tenderloin the other day at our local grocery store and decided to cook it on the grill. Since this was already seasoned, all I really had to do was grill it. You can buy unseasoned pork tenderloins and add your own special seasoning to your liking.



Here is how I grilled this 1-1/2 lb. pork tenderloin. I first set my gas grill on high and let it heat up. I then seared both sides of the tenderloin on high for five minutes per side.



Then I turned the heat down to the low setting on my grill, closed the lid, and grilled for another 20 minutes until the internal temperature reached 160 degrees.

Here are the results, I ended up very nice juicy slices of pork tenderloin, We served this with Roasted Sweet Potatoes in Coconut oil.

Grilled Steak with Onion and Blue Cheese

Time to break out the grills, gas, or charcoal whichever you prefer.

My son graduated from culinary school and is always coming up with something new. This grilled steak with onion and blue cheese is simply amazing.

This is great served with a nice salad, baked potato, or French fries, and a glass of wine or a beer.

I like to have a beer while I'm grilling my steak. If you like good steaks every now and then forget your diet for one day and give this a try.

INGREDIENTS
  • 1 steak of your choice (I like a nice rib-eye)
  • McCormick Montreal Steak Seasoning
  • 1 large onion
  • 2 or 3 green onions
  • About 1/2 cup of blue cheese or 2 slices of provolone cheese (your choice)
  • 2 strips of bacon (Optional)
INSTRUCTIONS
  1. Fire up the grill, while you're waiting to season your steak with McCormick Seasoning.
  2. Put your steak on the grill and begin cooking to your liking (I like my steak medium rare)
  3. If you're using the bacon cook it in a small fry pan (break it into small pieces)
  4. Slice the onion into nice large rings
  5. Chop up the green stems of the green onions
  6. When the steak is almost finished add the onion rings to the grill
  7. Cook the onion for a couple of minutes turning once
  8. When the steak is ready place the onion rings on top, add your cheese and bacon, close the lid on the grill
  9. When the cheese has melted and begins to brown take the steak off of the grill
  10. Garnish with the green onions
