Recently my daughter has been cooking with coconut oil. When I asked why
coconut oil, she replied because it’s healthy. So with that answer, I began to
investigate, and here is what I learned.
Coconut Oil contains a unique combination of fatty acids with powerful
medicinal properties. Although coconut oil is high in saturated fats, it’s not
the same as the saturated fats in cheese and steak. The fatty acids are
metabolized differently and are known to have therapeutic effects on brain
disorders like epilepsy and Alzheimer’s.

Coconut oil reminded me of my childhood years in the Philippines when sitting next to my granny making coconut oil. I know how to make coconut oil as I learned it from my granny and my mother but I have not made it here in my adopted country as I seldom see coconut here. DeleteGrowing up in Goa, India, I remember my Avo (grandma) cooking food, especially frying, in coconut oil. My mom used it too in some of her cooking. Coconut as a whole is a staple for cooking in Indian/Goan cuisine. Enjoy your weekend Sam!

DeleteI have purchased coconut oil...but never use it regularly enough to form an opinion. I bought it for my cooking and to feed a bit to the dogs. Willy loves it on his food... when I remember. I just don't remember to use it.
