Instant Pot Country Ribs and Sauerkraut

Eating pork and sauerkraut on New Years Day is well known to be good luck for the New Year. I'm not sure that this always works but who are we to break such a well-known tradition. So, we always have our pork and sauerkraut on New Years Day.

Since Santa brought Fran an Instant Pot for Christmas this year we thought what a great way to make our pork and sauerkraut.

So far we've only made a couple of things in the Instant Pot. Fran made meatballs and tomato sauce the other day in about 30 minutes and it was delicious.

And, this is coming from somebody who likes their tomato sauce cooking for hours. I didn't document the sauce process but, when we make it again I'll post it.

Instant Pot Country Ribs

The first thing was to brown the ribs on all sides. To do this, I let the Instant Pot heat, up and then added 2 tablespoons of peanut oil. I added some black pepper and browned the ribs on all sides.

Instant Pot country Ribs and Sauerkraut:

Here is what I used:

1-1/2 lbs boneless Country Ribs
2 tablespoons peanut oil or Olive Oil (For Browning)
2 lbs. sauerkraut (drained)
2 heaping tablespoons brown sugar
1/3 cup water

Instructions:
  1. First I warmed up the Instant Pot by pressing the saute' button.
  2. Added the oil, black pepper and browned the ribs on all sides.
  3. I added the sauerkraut, brown sugar and water.
  4. Lock the lid in place and make sure the vent is closed.
  5. Pressed the manual button, then set the time on 20 minutes.
  6. After 20 minutes I moved the vent to open to relieve the pressure.
  7. Then pressed the keep warm button for about 5 minutes before opening.
That's all there was to it. In about 30 minutes we were enjoying delicious Country ribs and sauerkraut. 

I highly recommend the Instant Pot for quick and easy meals. I can see why they say this is a real time saver.

  1. I have heard about the instant pot being a real time-saver, Sam. I go (way) back to the days of pressure cookers, so understand a bit how nice it is to have a 'quick' one-pot way of cooking.

    BTW, Our New Year's traditional food for many years was Goose, wild rice and black eyed peas. Black Eyed Peas according to hubby's side of the family brought you 'good luck' and good fortune (wealth) in the new year. Personally, I 'dislike' black eyed peas, but had to eat it or break the pattern of good fortune ~ so, I ate ONE. LOL.

  7. Second,time in using my insta pot. First time I made Insta Pot Lasagna for a group of people we have over once a month,everyone loved it. Tonight I am making country style ribs with sour kraut. I added whole slices white onion. Insta Pot is a meal lifesaver.

    1. The brown sugar doesn’t change the flavor, just calms the tartness of sauerkraut a little.

  12. We crisp up some small pieces of bacon, then sauté sliced onion in bacon fat. Brown ribs. Then stir in sauerkraut with bacon and onions. Put ribs on top.

  13. Yum....made this tonight for dinner....used 2 jars of German style sauerkraut, left out the brown sugar added potatoes and carrot on top of the kraut and did a natural release..... perfect

  14. Hey Sam...
    I make this dish using a cast iron dutch oven and include halved red potatoes.
    It takes a few hours to brown, layer and cook the whole thing in an oven.
    I just got an InstaPot and was wondering if you knew...how long should the cook time be if I threw in a dozen red potato halves on top of the country style ribs and 'kraut.
    Any idea(s)?

    1. I would add the potatoes and cook them for the full 20 minutes and then see if they are tender. If not add add a about 5 minutes at a time until done. Thanks.

  15. I put a steamer basket on top of the ribs and kraut and place potatoes in it and mash when all is done. Make sure potatoes are pretty large pieces so they don’t overcook..

  16. I love country style ribs and sauerkraut. I pretty much cooked mine just like the recipe above but I add a couple of teaspoons of caraway seeds and a beer Plus two large potatoes peeled but not cut up because they'll to be too mushy
