How to Make Alfredo Sauce

A plate of alfredo tortellini

Alfredo sauce for your favorite pasta is really easy to make, and it’s OH so delicious. Our daughter whipped this Alfredo sauce up just the other night for this amazing Tortellini Alfredo.

I’m showing the fresh parsley as optional because our grandson doesn’t like anything green in his food. But I do recommend using parsley for this Alfredo Sauce.

This recipe will be enough for 1 pound of your favorite pasta.

Here is what you need:

1/2 Stick of butter
1 1/2 cups of Parmesan Cheese (grated)
1 cup of heavy cream
1 clove of garlic (minced)
½ cup of fresh chopped parsley (optional)

This is what you do:

  1. In a medium saucepan, melt the butter with the garlic, and then add the cream.
  2. Bring this to a simmer while stirring, and add the grated cheese.
  3. Continue to stir until you bring it to a slight boil
  4. Pour over and mix with your favorite pasta, garnish with the fresh parsley, and enjoy a simple pasta Alfredo dinner.
As always Thanks so much for stopping by and I hope you enjoy it

Broiled Asparagus with Pistachio Nuts

Broiled Asparagus

Broiled asparagus with pistachio nuts is a wonderful side dish to serve with a nice steak and baked potato, or with any meal. There are all kinds of articles on the health benefits of asparagus.

I'm not going to go there because you can look them up anytime. If you like asparagus, and I do, this is a quick, easy, and tasty way to make it.

This takes about 2 minutes of prep time and 10 minutes to cook, and it just tastes so wonderful right out of the broiler. Give it a try you're going to love it.

Add a little more flavor by squeezing a fresh lemon wedge over the asparagus right out of the broiler.

Ingredients
  • 1 bunch of fresh asparagus
  • 1 clove of garlic minced (option garlic powder)
  • 1 small bag of shelled pistachios (option walnuts or pecans) or none at all if you don't like nuts.
  • Olive Oil ( Light)
Instructions:
  1. Spread your asparagus on a cookie sheet or broiler pan
  2. Drizzle or spray with light olive oil
  3. Spread the minced garlic over the asparagus
  4. Add the pistachios
  5. Set your oven on the broil setting
  6. Place in your broiler for about 5 to 8 minutes (time may vary depending on your oven)

Grilled Steak with Onion and Blue Cheese

Grilled steak with onions and blue chees

Time to break out the grills, gas, or charcoal whichever you prefer.

My son graduated from culinary school and is always coming up with something new. This grilled steak with onion and blue cheese is simply amazing.

This is great served with a nice salad, baked potato, or French fries, and a glass of wine or a beer.

I like to have a beer while I'm grilling my steak. If you like good steaks every now and then forget your diet for one day and give this a try.

INGREDIENTS
  • 1 steak of your choice (I like a nice rib-eye)
  • McCormick Montreal Steak Seasoning
  • 1 large onion
  • 2 or 3 green onions
  • About 1/2 cup of blue cheese or 2 slices of provolone cheese (your choice)
  • 2 strips of bacon (Optional)
INSTRUCTIONS
  1. Fire up the grill, while you're waiting to season your steak with McCormick Seasoning.
  2. Put your steak on the grill and begin cooking to your liking (I like my steak medium rare)
  3. If you're using the bacon cook it in a small fry pan (break it into small pieces)
  4. Slice the onion into nice large rings
  5. Chop up the green stems of the green onions
  6. When the steak is almost finished add the onion rings to the grill
  7. Cook the onion for a couple of minutes turning once
  8. When the steak is ready place the onion rings on top, add your cheese and bacon, close the lid on the grill
  9. When the cheese has melted and begins to brown take the steak off of the grill
  10. Garnish with the green onions
