Beef and Sausage Chili

This sausage beef chili recipe is the perfect cold weather day warm-up. I’ve made chili plenty of times, and always used the standard chili kit that you find in the grocery store.

Jamie has been making this award-winning chili for a few years now. This chili recipe is amazing, and Oh so good. I thought it was time to put it all down in writing and share it with you.

This is a meal the whole family is going to enjoy.  We make this often during football season, it's a great game-day treat.

Are you ready? Here is what you need:

2 lbs. of ground beef (80/20)
1 lb. bulk Italian Sausage
2- 16oz. can of Red Chili Beans (In Medium chili sauce)
2- 16oz. can of Red Chili Beans (In Hot sauce)
2- 6oz. cans of tomato paste
2- 28oz cans diced fire-roasted tomatoes (with juice)
1 large yellow onion (chopped)
2 green chili peppers (seeded and chopped)
2 Green Bell peppers (chopped)
1 Red Bell pepper (chopped)
2 Jalapeno peppers (chopped)
10 slices cooked bacon (chopped)
½ cup beer (optional)
¼ cup chili powder
2 cloves of garlic minced
2 tsp. ground cumin
1 tsp. paprika
1 tsp. white sugar

For the garnish:

Shredded Cheddar Cheese
Sour Cream
Frito corn chips or crackers

Instructions:

  1. In a large pot, add your meat and cook it until it’s browned.
  2. Now drain the grease from the pot.
  3. Add everything else into the pot, bring this to a slight boil, and then set it on simmer.
  4. Cook this for 2 hours, adding more seasoning to your taste.
  5. Top off your hearty bowl of chili with some shredded cheddar, and sour cream for a nice cold-weather warm-up.

Grilled Steak with Onion and Blue Cheese

Time to break out the grills, gas, or charcoal whichever you prefer.

My son graduated from culinary school and is always coming up with something new. This grilled steak with onion and blue cheese is simply amazing.

This is great served with a nice salad, baked potato, or French fries, and a glass of wine or a beer.

I like to have a beer while I'm grilling my steak. If you like good steaks every now and then forget your diet for one day and give this a try.

INGREDIENTS
  • 1 steak of your choice (I like a nice rib-eye)
  • McCormick Montreal Steak Seasoning
  • 1 large onion
  • 2 or 3 green onions
  • About 1/2 cup of blue cheese or 2 slices of provolone cheese (your choice)
  • 2 strips of bacon (Optional)
INSTRUCTIONS
  1. Fire up the grill, while you're waiting to season your steak with McCormick Seasoning.
  2. Put your steak on the grill and begin cooking to your liking (I like my steak medium rare)
  3. If you're using the bacon cook it in a small fry pan (break it into small pieces)
  4. Slice the onion into nice large rings
  5. Chop up the green stems of the green onions
  6. When the steak is almost finished add the onion rings to the grill
  7. Cook the onion for a couple of minutes turning once
  8. When the steak is ready place the onion rings on top, add your cheese and bacon, close the lid on the grill
  9. When the cheese has melted and begins to brown take the steak off of the grill
  10. Garnish with the green onions

How to make Hot Dog Chili

If you are a fan of a good old-fashioned hot dog with chili, then this recipe is just what you need. I grew up in a small Western Pennsylvania town, where hot dogs are a staple.

There were several hot dog shops around town, each specializing in its own chili sauce. We moved away from our hometown, and it turns out that hot dogs with chili are one of the foods we miss the most. Now we have a recipe to make our own that reminds us of home.

There are so many garnishes for hot dogs, but I like mine with mustard, onion, and chili. Sometimes I add a nice thin slice of dill pickle on top, and it's oh-so-good.

Ingredients:

  • 1 Pound of ground beef
  • 1 small onion chopped very fine
  • 1/4 tsp cumin
  • 1 tsp paprika
  • 1 1/2 tsp chili powder
  • 1 tsp cayenne pepper
  • 3/4 tsp allspice
  • 1/4 tsp sage
  • 1/2 tsp oregano
  • Sprinkle in some garlic powder and salt (just a little)
Instructions:
  1. In a medium saucepan brown all of the ingredients
  2. Add 1 cup of water
  3. Add 2 tablespoons of cracker meal
  4. Cook for 1 hour
Give it a try and enjoy a nice chili dog. It's a simple recipe and you could even make it ahead and freeze it for later.

Steak Salad

Steak Salad

This steak salad is sure to please even the biggest of appetites. Steak salad is simply thin slices of steak seared on high heat and served over a bed of your favorite greens and veggies. I like adding french fries and heating up the dressing for my steak salads.

What a quick and easy meal to prepare, and it offers everything on one plate. Your greens, veggies, meat, and potatoes, what more could anybody ask for.

I've made this with New York strip steak, but I have to tell you I like it better with a nice Rib-Eye. If you don't eat steak try your favorite seafood or chicken. Steak salad is a wonderful meal made fresh to order or easily made from leftovers.


INGREDIENTS:
  • 16 oz. New York Strip or any steak of your choice, this should make 2 or 3 salads
  • Montreal steak seasoning
  • 1 bag of steak fries, or French fries found in your frozen food section. (Best is Homemade)
  • Romaine lettuce is enough for however many salads you want to make
  • 1 bunch of green onions
  • 2 or 3 nice tomatoes
  • 1 bag of shredded cheddar cheese
  • 2 or 3 hard-boiled eggs
  • Sliced or chopped green and red bell peppers
  • 1 bottle of sweet and sour or poppy seed salad dressing. Or any dressing that you prefer.
Cut thin slices of your favorite steak and cook it on high heat for about one minute per side or to your liking. Prepare your french fries and hard-boiled eggs and build your salad it's that simple.

Choose your favorite salad dressing and enjoy. A couple of my favorite dressings are ranch and blue cheese.
