Instant Pot Easy Chicken Noodle Soup

Instant Pot Easy Chicken Noodle Soup

This instant pot easy chicken noodle soup will surely warm you up on those cold winter days. We are just loving our new Instant Pot. Fran had this soup ready in less than an hour.

We enjoyed this hearty soup just before we left the house to watch our local hockey team play. Sadly we lost the game in overtime. But, at least we had this delicious chicken noodle soup before the game. It was the perfect meal before going to the ice arena.

Instant Pot Easy Chicken Noodle Soup

Ingredients:

2 tablespoons olive oil
1 medium onion Chopped
4 carrots cut into round pieces
3 stalks celery chopped
1 clove garlic minced or 1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 large chicken breasts (We used bone-in, but you can use boneless)
32 oz. chicken broth
4 cups water
1 package wide egg noodles

Directions:
  1. Press the saute' button and let the Instant Pot heat up for a couple of minutes.
  2. Add the oil, onion, carrots, celery, garlic, salt, and pepper.
  3. Stir and cook about 5 minutes to allow them to get tender.
  4. Add the chicken breasts (we removed the skin), Chicken broth, and water.
  5. Set and lock the instant pot lid and make sure the vent button is closed.
  6. Press the Soup/Broth button and set the time for 30 minutes.
  7. After the cycle, open the vent to release the pressure, wait a couple of minutes before unlocking the lid.
  8. Remove the chicken breasts with a pair of tongs and let cool a few minutes.
  9. Press the Saute' button and bring the soup to a boil. While your waiting you can shred the chicken breasts.
  10. When the soup comes to a boil add the noodles. Cook the noodles to your liking then add the shredded chicken and stir in until all is mixed well.
Now you can serve and enjoy this hearty chicken noodle soup. Ready in less than one hour and oh so delicious.

Soup Croutons

Easy Croutons recipe

This easy croutons recipe has been in our family for as long as I can remember. Passed down from our grandmother to our mother's to us. Every time grandma Liz made her Wedding Soup she made these soup croutons to go along with it.

I've only had these in Wedding Soup, but I'm sure they would be great in any of your favorite soups. I had a recipe for these and have made them several times. They just weren't the same as grandma's soup croutons.

Once again I had to call out the reserves, my cousin Jimmy from Arizona had the recipe just the way that grandma made them.

Here is the recipe for soup croutons:

Jimmy's Ingredients for Soup Croutons:

6 large eggs (separated)
4 tablespoons flour
6 teaspoons baking powder
1 tablespoon parsley
1 tablespoon grated Romano cheese
1/2 teaspoon salt
1/4 teaspoon black pepper

This handy set of six measuring spoons makes adding your liquid or dry ingredients a breeze. Everyone needs a set of these in the kitchen 








Jimmy's Instructions for easy soup croutons:
  1. In a large bowl, combine egg yolks with all other ingredients and mix well.
  2. In another bowl beat the egg whites until they are fluffy and form peaks.
  3. Fold the egg whites into the egg yolk mixture using a spatula.
  4. Pour and spread the mixture into a 9 x 13 inch greased cookie sheet.
  5. Preheat your oven to 375 degrees and bake for 15 minutes or until golden brown.
  6. Let them cool and cut into 1-inch cubes.

The fall season is now upon us here in Western New York and soon it will be winter and the snow will be flying. Oh! I'm so not ready for the cold weather.

Not to worry, though, I've combined five of my favorites from previous posts all into one post, to help you through the cold weather.


This is a family favorite and is made with meatballs. Serve with some fresh Italian bread and this soup is a meal all by itself.

This one is the perfect warm me up on a cold winter day and another soup you can make a meal out of. 


This award winning chili is not your average chili. My daughter makes this the best, I don't know where she got the recipe but you're going to love it. This chili is also a gameday favorite for us.

We are certainly in the cold season now, and when it gets cold outside we like our soups. There is nothing better than serving your family a hearty and healthy bowl of soup.

I like all kinds of soups, especially in the winter months, which happens to last a long time in here in Western New York.

Here is a recipe that my we found on-line last year called Italian Peasant Soup. This is a recipe by Kim Knight of Hamburg, Pennsylvania.

We’ve made this a few times now and I've got to tell you it is absolutely delicious, and easy to make.

This French Onion Soup is another home recipe that is easy to make. You don’t have to go out to a restaurant anymore to enjoy French Onion soup.

There is nothing that I liked better than going out to a nice restaurant and ordering French Onion soup as a starter to a great meal.

Here is a wonderfully easy French Onion Soup recipe that you can whip up in no time at all and enjoy this soup right at home.

French Onion Soup Ingredients:

  • ½ cup of unsalted butter
  • 5 onions (Sliced)
  • 1 clove garlic (chopped)
  • 2 Sprigs of fresh Thyme
  • 1 cup red wine
  • 2 quarts of beef broth (We use Swanson's Low Sodium)
  • 1 baguette (Sliced)
  • ¾ pound of grated provolone and asiago cheese (Option Swiss cheese)
Instructions:

  1. In a stock pot melt the butter, add the garlic, thyme, and onions, you can add just a little water if needed.
  2. Cook until the onions a caramelized, then add the wine and simmer until the wine is gone, then remove the thyme.
  3. Add the beef broth; bring to a slight boil and then turn down to simmer for about 15 minutes.
  4. Ladle the soup into oven-safe bowls. Add 2 slices of the baguette and cover with the cheese.
  5. Place under the broiler until the cheese is melted and turning brown.

How to make Italian Wedding Soup

Italian style wedding soup recipe


Warm up on a cold winter day with a hot bowl of homemade wedding soup. This recipe has been in our family for generations. There are many variations of wedding soup, but I like this one the best because this recipe is right from my grandmother’s kitchen.

This Italian style wedding soup recipe has been passed down from my grandmother to my mother and now to Fran.

This soup is a great starter for any meal. Wedding soup is a favorite in our house, especially around the Holidays. 

Some variations to this recipe are, add carrots, or some people add Orzo, or you could use ground pork for your meatballs. So, you can make this delicious soup to your taste.

Ingredients for Italian Wedding Soup:
  • 6 chicken breast (you can use boneless)
  • 1 whole onion
  • 1 stock of celery (Cut into small Pieces)
  • 3 stocks of endive or escarole (clean, boil, squeeze all of the water out, cut into small pieces)
  • Salt (To Taste)
  • Pepper (To Taste)
  • Chicken base (2- cans of Swanson chicken broth)
 Ingredients for the meatballs:
Instructions:
  1. We use a 12-quart pot, add chicken, carrots, celery, and onion to the pot, cover with water and boil.
  2. When chicken is cooked (tender) remove the chicken, set aside to cool
  3. Mix the ground beef with the ingredients, roll into small 1" meatballs, you can fry them or bake in the oven
  4. Shred or cut the chicken into small pieces
  5. Skim the foam from the broth and discard the onion
  6. Add the chicken, greens, and meatballs back into the broth
  7. Add the 2 cans of Swanson chicken broth (we like to use low sodium broth)
  8. Bring the soup to a boil, and then let it simmer for about 15 minutes
